Where does Recuva extract VSC files from? System restore images?

I have a strange issue I'm dealing with.  I used Recuva to extract an OST file (Outlook IMAP cache file) from a recent VSC, which I assume is from the system restore image.  The recovered OST differs greatly from the one currently in use by Outlook; it's about 3 times the size.

However, after some digging, I found This Microsoft document indicating the OST files are excluded from system restores by default, and further confirmed that this setting is present in the registry.

So, am I mistaken in thinking that the Recuva pulls VSC files from system restore images?  What's actually happening here and from where did Recuva extract the file?
