I accidently deleted some files from my NAS and need to recover them. The free version of Recuva will not open the NAS device. Will the Professional version open it? If not, what other options do I have?

No, sorry but recuva can only scan locally connected drives which are mapped to the drive manager in windows with a drive letter
As to 'other options', my NAS has a snapshot function, or in other words, an archive of old files.
Does your NAS have any sort of built-in, self-backup feature like file history, archiving, system snapshots or whatever your brand may call it?
Have you ever backed the NAS up to a USB connected drive?
What RAID was the NAS set to? As that may even determine if the NAS drives can be removed and physically connected to the PC directly.
