This is a topic that has been discussed many times on this forum.
Using the search tool with terms like secure deletion will find many results.

I think that a simple overwrite is sufficient for most data.

Ah right, so no matter which I choose they are pretty much doing the same? Over-writing the data? I currently use the last option, Gutmann (35 Passes), is that a good choice? I don't mind the wait, so long as it does a good job. Is it the most "secure"?

It sounds logical that the more you overwrite, the less of a chance there is to recover some data.
I personally think 35 passes is overkill. A simple overwrite is sufficient.
Overwriting once should stop regular forensic examinations. TLA agencies can examine drives with electron microscopes but unless its a case of national security, an individual would get a regular old forensic examination.
