I notice Speccy only recognizes one of my two monitors. Is this just a limitation of the free version or am I missing a toggle switch somewhere?

Speccy is a free program, there is no paid version.
Could you post a screenshot of the Summary tab ?
Also, the devs may want to see some debug info. Follow the instuctions here to provide this info.
Seems like a problem on your end, speccy detects both of my displays just fine.
