Is there anyway I can stop getting updates for my display/monitor/screen?
The one I keep getting offered puts my screen out of resolution and I have to revert.

In short, you should see a "Learn More" button next to the driver - click on that, then Skip the proposed update and it will no longer be recommended to you. (New releases of drivers for that device will still be recommended, however.)
