Running Win10 x64 and I have several mapped drives to my NAS. I've setup CCleaner to 'clean' the recycle bin of the mapped drives, but it doesn't appear the app is doing so. Any ideas?

and how have you told CC to clean it's recycle bin?
most NAS boxes don't show a Recycle Bin folder due to them not running a Windows OS and the file system they use and the RAID configuration.

I have a QNAP NAS.
In CCleaner, under Options -->Include, I've mapped to the folder containing the "@recycle"

I recall (hopefully correctly) that CC cannot access mapped drives, so that could well be your issue.
In fact if you go to Options, Include, Add then Browse, mapped drives don't show up.
Did you add them straight into the .INI file?
No - I haven't tried adding these paths to the INI file. Is there a certain way this should be done?

if mapped drives aren't accessible from CC then you are up the proverbial creek, paddle or not.
